Ingredients:
- Baking spray
- 2 medium ripe bananas mashed (the riper the better)
- 1 cup of uncooked quick oats*
- 1/4 cup crushed walnuts
Directions:
- Preheat the oven to 350°F.
- Spray a non-stick cookie sheet with cooking spray.
- Combine the mashed bananas and oats in a bowl.
- Fold in the walnuts.
- Place a tablespoon of the mixture on the cookie sheet and repeat until the sheet is filled. (Make sure each cookie is at least ½ inch apart.)
- Bake for 15 minutes.
Variations:
- Try adding some peanut butter powder for a different flavor.
- Add cinnamon or pumpkin spice.
- Switch out walnuts for almonds or dark chocolate chips.
Notes:
- Leftover cookies can be frozen. Just thaw or heat in the microwave for a few seconds before eating.
