Banana Oatmeal Cookies

Equipment: bowl, knife, measuring spoons, glass or mug, cookie sheet


Ingredients:

  • Baking spray
  • 2 medium ripe bananas mashed (the riper the better)
  • 1 cup of uncooked quick oats*
  • 1/4 cup crushed walnuts

Directions:

  1. Preheat the oven to 350°F.  
  2. Spray a non-stick cookie sheet with cooking spray.
  3. Combine the mashed bananas and oats in a bowl.
  4. Fold in the walnuts.
  5. Place a tablespoon of the mixture on the cookie sheet and repeat until the sheet is filled. (Make sure each cookie is at least ½ inch apart.)
  6. Bake for 15 minutes.

Variations:

  • Try adding some peanut butter powder for a different flavor.
  • Add cinnamon or pumpkin spice.
  • Switch out walnuts for almonds or dark chocolate chips.

Notes:

  • Leftover cookies can be frozen. Just thaw or heat in the microwave for a few seconds before eating.
