Boiled Daikon Soup with Pork Ribs

Equipment: large pot, lid


Ingredients:

  • Pork spare ribs (cut into 1.5-2 inch pieces): 12 oz
  • Daikon (white radish) (One 2lb daikon washed, peeled and cut into 1-1.5 inch chunks): 
  • Salt: 1/2 tsp
  • Water: 8 cups

Directions:

  1. Blanch the pork in boiling water for 5 minutes to clean and remove blood.
  2. Put all the ingredients into a large pot and add 8 cups of water. 
  3. Make sure the water covers all the ingredients by 1 inch.
  4. Bring the water to a boil on medium high heat.
  5. About 30 minutes later, reduce heat to low and simmer for about 20 minutes or until the pork is tender.
  6. Season with salt to taste.
