Tahini Chocolate Chip Cookies

Ingredients:

  • ¼ cup cane sugar
  • ⅓ cup brown sugar, packed
  • 1 teaspoon salt
  • ½ cup tahini
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¾ cup dark chocolate chips or chunks

Directions:

  1. In a large bowl, whisk together the cane sugar, brown sugar, and salt.
  2. Mix the tahini into the dry mix until a smooth paste forms.
  3. Whisk in the egg and vanilla until light ribbons form from the whisk and remain for a second before falling back into the rest of the mix.
  4. Sift in the flour and baking soda slowly. Mix in the flour and baking soda with a spatula, making sure not to overmix as this would give the cookies a cakier texture. 
  5. Mix in the chocolate chips or chunks.
  6. Chill the dough in the fridge for at least 30 minutes.
  7. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  8. Scoop the dough with a spoon onto the baking sheet, leaving space around each cookie to spread out while baking.
  9. Bake for 12 to 15 minutes and let cool before serving.

Variations:

  • Use almond flour instead of all-purpose flour to make the recipe gluten-free.

Notes:

  • Keeps for 7 days at room temperature, 2 months in the fridge, or 8 to 12 months in the freezer.
  • Store in a sealed container.
  • Reheat in the microwave.
